I'm looking for dependable/reliable overnight bread bakers for my small-batch boutique bakery who are driven and passionate about baking world class bread and pastries. Weare a small bakery with a huge loyal following that have very decerning tastes. We are more than just bread, but bread is the soul of our bakery. The overnight bread baker is responsible for production of all yeasted baked goods, including hearth breads, rolls, pan loaves, and pastries. This includes the mixing, shaping and baking of various styles of breads inour Polin hearth oven, and baking off pastries in our MIWE convection oven. The individual in this role must work with a strong attention to detail and be capable of working unsupervised. Experience in hand-crafted bread and pastry production, and the use of baker's math is necessary.Requirements and Qualifications: Must be consistently punctual! "Early is on time; on time, is late; and late is unacceptable." If you can't get her 10 minutes before your shift begins, don't bother to apply. Not my place to have to wake you up and remind you that your shift started 10 minutes ago. We can teach you anything, but we can't teach you character. You either got it, or you don't. Minimum 2 years of experience in a production bakery environment. (Home bakers need not apply. I've tried it, and they all run out of the bakery like their hair is on fire.) You're not baking with grandma, and must understand what it means to work with a sense of urgency. Must be able to work weekends, and adapt tobeginning shift at midnight and working through the night. It's a lifestyle to which you will grow accustomed and enjoy. You must understand that weare a bread bakery, and that's whenthe creation of real bread occurs. Must be based in New York metropolitan area and be a US citizen or Visa holder. Must be passionate about the production of world-class bread and pastries. We don't do mediocre here! Must be able to mutli-task, and work cleanly and efficiently. Must have a positive attitude and work effectively as a member of a team. Negative energy is not tolerated and anyone demonstrating such will be dispatched without a second thought. You will not be permitted to infect the team. You must be capable of following instructions and understand you will adhere tocompany practices and procedures at all times, without exception. Although I encouage creativity in the forum of new product development, there is only one way to perfom daily production, and that isthe companyway. Must possess basic knowledge of baking principles and baker's math. Must complete food safety program administered by the Suffolk County Department of Health andprovide current certificate of completion. Facial and head hair must be close cropped, or a cap and/or beard net are to be worn in the bakery at all times while working. Black chefs or yoga pants are permitted together with black non-slip footwear. A clean chefs coat and apron will be provided on a daily basis.
